It’s called “Potatoes…Goodness Unearthed,” and it’s a multimedia campaign that’s reaching millions of consumers nationwide and helping them feel great about enjoying potatoes as part of a healthy lifestyle. So, you can feel good knowing your customers are getting the message—at the store and in the media—that today’s potatoes are delicious and nutritious. It’s that combination that makes them truly “goodness unearthed.”

Peel Back the Truth! Potatoes are Good for You. Do you love potatoes but think they’re a fattening, worthless starch? Guess Again!!!!
This darling of the dinner table is one of the greatest nutritional values in the produce department. At just 25 cents per serving, a medium potato (5.3 oz) eaten with its skin on:
•Has just 110 calories•Has nearly half your Daily Value of vitamin C (45%)
•Is one of the best sources of potassium (614 mg) and fiber (2 g) in the produce section. (Did you know potassium helps maintain normal blood pressure?)
•Is naturally fat-free and sodium-free
•Contains many of the nutrients the Dietary Guidelines (link to site) recommend Americans increase in their diet
And, according to USDA MyPyramid (link to site), 1 medium skin-on potato = 1 cup starchy vegetables.
This recipe is great for people who crave Mexican food but strive to consume fewer calories. The chili and lime flavors make this recipe truly authentic and with all four recipes under 250 calories and 7 grams of fat per serving, they’re perfect to include in a low-calorie diet. It’s easy to adapt the basic recipe to fit your favorite flavor profile or a vegetarian diet using one of the variations below: Chicken Verde, Turkey and Red Chili, or Soy Chorizo and Vegetable.

Cook time: about 20 minutes total
Serves: 4
Ingredients
~ 1/2 pound Yukon Gold or red potatoes, cut into bite-size cubes
~ Olive oil cooking spray
~ 1/2 cup chopped onion
~ 1/2 pound diced boneless, skinless chicken breasts
~ 1/4 cup finely chopped poblano, Anaheim or bell pepper
~ 1 teaspoon Mexican seasoning blend
~ 1/2 cup red chili enchilada sauce
~ 1/2 cup shredded reduced-fat Monterey Jack cheese
~ 8 small corn tortillas*, warmed or crunchy taco shells
~ Shredded cabbage or romaine lettuce, diced tomato, diced avocado, thinly sliced radishes, fresh cilantro leaves and salsa (optional toppers)
~ 8 lime wedges
Directions
Place potatoes in a microwave-safe bowl and cover with plastic wrap. Microwave on HIGH for 5 to 7 minutes. Spray a large skillet liberally with cooking spray. Add potatoes and onion to skillet; cook over medium-high heat for 5 minutes, stirring and coating with cooking spray occasionally. Stir in chicken, pepper and seasoning and cook for 5 minutes more. Add red chili enchilada sauce and simmer for 5 minutes. Place equal amounts of cheese on each tortillas and heat in a skillet until cheese is melted. Add potato mixture and any other desired toppings. Serve with lime wedge.
*Soft homemade-style tortillas are best in this recipe and can be found at most grocery stores.
Lose the Weight, Not the Potatoes!
Potatoes often get a bad rap. Whether it was the low-carb diet craze or Atkins or another diet fad, potatoes always seemed to appear on the “do not eat” list. However, research recently released by the USPB demonstrates that potatoes can be included in a weight loss diet and don’t need to end up on anyone’s “do not eat” list. The study was conducted by the University of California, Davis and the National Center for Food Safety and Technology, Illinois Institute of Technology with the goal of gaining a better understanding of the role of potatoes in weight loss. The research was based on an extensive study in which 86 overweight men and women were monitored over the course of 12 weeks. The subjects were divided into three groups:
· High glycemic index foods with a 500 kcal/day deficit
· Low glycemic index foods with a 500 kcal/day deficit
· Basic adherence to the U.S. Dietary Guidelines and the Food Guide Pyramid
All three groups ate between 5-7 potatoes per week and all three groups lost weight.
The conclusion? Consuming potatoes seemed to aid in weight loss even in those without a conscious calorie restriction. This confirms what health professionals and nutrition experts have said for years: when it comes to weight loss, it is not about eliminating a certain food or food groups, rather, it is reducing calories that counts.
